The heat of summer is a good time to enjoy the heat of hot peppers, and through the Exotic Pepper Project, Rutgers is growing a range of peppers that thrive in New Jersey’s climate and appeal to its diverse population, ranging from the mild poblano to the fiery Trinidad scorpion. Aside from being a good source of vitamins and antioxidants, many peppers have ornamental value (a very lucrative part of the agricultural industry) as well as biopharmaceutical and biopesticidal uses.
