Rutgers Food Innovation Center helped create the meatless Impossible Burger, now in growing demand.
Amid rising concerns about the health ramifications of eating red meat, not to mention the environmental cost to produce it, people are thinking twice about hamburgers. But now you can have your hamburger and eat it, too. The Rutgers Food Innovation Center, an incubator that helps companies develop ideas for food products and bring them to market, worked with Impossible Foods to create the Impossible Burger. Having the taste and properties of the old standard-bearer (thanks to a plant compound called heme, which imparts the great flavor and texture), the meatless patty is now served in more than 7,000 restaurants worldwide and available in grocery stores. It’s the greatest thing since sliced bread.
